How To Make Christmas Pastry Snowflake

This pastry snowflake might look impressive, but you don’t have to be confident in the kitchen to get it right, trust us. It’s a simple bake that only requires a clever bit of cutting & twisting to make it look the part.  

It’s made with a rich milk chocolate Protein Spread filling, enriched with high-quality whey protein, and has 87% less sugar than supermarket alternatives. What a win.

Ingredients

  • 1 sheet ready-made puff pastry
  • 1 tbsp. Protein Spread (Milk Chocolate)
  • 1 egg (beat for an egg wash)
  • 20 g icing sugar (to dust)

Method

  1. Preheat the oven to 180°C.  
  2. Roll out the pastry sheet on top of a chopping board. Cut the rectangle in half so that you have two squares and then use something circular (like a cake tin) to cut around so that you get 2 even circles of pastry from those squares.  
  3. Spread the milk chocolate Protein Spread on top of one of the pastry circles, using the back of a spoon to smooth it into an even layer across the surface. Then carefully place the other pastry circle on top of the chocolate spread layer, so you have a pastry sandwich.  
  4. Place a small glass, jar, or other circular object in the centre of the top pastry circle and then cut lines from this right to the edge of the pastry. Aim for 16 evenly sized sections — it’s easier to section the circle into quarters first and then add more lines from there.  
  5. Remove the glass from the centre and then carefully lift each section up and twist the strand a few times. Pinch together two strands at the bottom so they’re paired up. Repeat until all sections are complete.
  6. Brush the pastry snowflake with egg wash and then bake for 20 minutes (or until golden brown).  
  7. Leave to cool for a few minutes before dusting with icing sugar and serving!
